To me there is nothing better on a cold winter day than a bowl of warm yummy soup!! I'm a soup gal anyway, so having an excuse to have soup more often is a big plus in my book. I know this soup/chili might not look the yummiest, but when it hits your tastebuds they'll thank you for it! A friend brought me this soup right after I had my 3rd baby girl, so it's mild, but still very flavorful. I doubled the recipe for my family of 5. My 3 girls ate it up last night, and my 3 yr old asked for it for breakfast.
White Chicken Chili
1# of chicken diced (it's easiest to use canned chicken, or leftover cooked chicken)
1/4 c. onion
1 can green chiles
1 c. chicken broth (I'll sometimes use 1 can)
1 15 oz can of white beans (Great Northern Beans work well)
1 tsp Garlic (powder or fresh, whatever you have)
1 tsp cumin
1/2 tsp cilantro (I didn't use this last night, I didn't have any, so w/or w/o)
1/4 tsp chili powder
If chicken is not cooked, saute in 1T butter or oil, add onion and saute until chicken is cooked and onion is transulcent. If chicken is cooked, only saute onion, then add chiles and spices. Add broth, beans and chicken, let simmer 15 minutes. Would be good in a crockpot too, just dump everything in.
Top with cheese if desired. Serve with tortilla chips.

Something Different
Making something good out of something ugly. When we bought our house there was no wood stove and we don't quite have room for one right now, so we've left the rock and pipe for future use, but it's pretty ugly, I wanted something to somewhat hide the pipe or at least distract from it. This fall I aquired this very large beautiful wreath from a friend. When I brought the wreath home I knew the perfect spot for it. A month or so later we started putting up Christmas decorations, the wreath seemed a bit bare, so we started hanging ornaments on it, and voila! A fun side came out of this wreath. I just love it! Do you have any ordinary decorations that stay up all year but get a Christmas makeover for a month or so??? Share it!
Starting Something New
I have decided I would like to get more into blogging. Not just about my family and life, but something more relevant to others. I love reading blogs that give ideas and tips, so I think I'll start by sharing some of my favorite tips that help me in daily life to keep things organized and low budget.
I, Clisty, am a frugal stay at home Mom of 3 beautiful girls 6, 3, and 11 months. I hope to be able to be part of a blog that people like to read and check up on and see what's new.
